Unfortunately rock quality is not so good. You can follow the Hornly ridge (the normal route on the Swiss side, longer but easier), or the Leone ridge (the normal route on the Italian side, just a bit more difficult). These routes are very popular; in a sunny day in july or august you will find up to one or two hundred people climbing there. My suggestion is to try the Zmutt ridge (between north and east faces); you can reach it from Schoenebiel Hutte, č3 hours walk from Zermatt (CH). Difficulties are up to IV degree (Welzenbach or UIAA scale), and the climbing enviroment is great (rock and ice). Else you can follow the Furgenn ridge (V deg, along italian/swiss border), reachable from Zermatt as well as from Cervinia (I), or directly the north face, but here difficulties are greater.
